Milk Fish Curry with Fresh Milk First
Version
Ingredient:

Fresh milk 1 cup

Water 1 cup

Green chili 3 pcs

Salt 1 tbsp

Milk fish fillets 500 grams

Nigella seed ¼ tsp

Turmeric powder 1 tsp

Coriander leaves chopped
Cooking
direction:
1.
Take the milk fish fillets wash
and clean it to make the milk fish curry with fresh
milk.

Take the turmeric powder and
salt then rub it on the surface of the milk fish fillet, flip it once then rub
the other surface again with turmeric powder and salt. Do this step to all of
the milk fish fillets. Let it aside for marinate.

Take a frying pan then pour the
mustard oil inside.
4.
Take the marinated milk fish
fillet then fry it until the color change to golden color. Do this step to all
of the milk fish fillets. Let it aside.
5.
Take a pot then pour around 3
tbsp of mustard oil inside, add the nigella seed then stir it.
6.
Take the green chili and chop
it then add to the pot. Lower the heat into low setting.
7.
Take a bowl then pour the fresh
milk inside. Add the turmeric powder then stir to mix them both so the color of
the fresh milk will turn yellowish gold.
8.
Pour the fresh milk mixture
into the previous pot then let it come to boil. Be very careful so it would not
spill by stirring it occasionally.
9.
Pour the water into the pot
then season it with salt. Let it simmer for a while until it boiled once again
and the liquid reduced.
10. Add the milk fish fillets into the pot then let it simmer for a
while to let the milk fish absorb the liquid.
11. Take the pot off the heat, pour the curry into a bowl then top it
with coriander leaves. Serve immediately with rice.

Ingredient:
- 1 cup fresh milk
- 1 kg Milk fish fillets
- 2 medium size onion chopped
- 100 gram tamarind
- 300 ml warm water
- ½ tsp turmeric powder
- 1 tbsp chili powder
- 1 tbsp cumin seed
- 1 tsp methi seed
- 1 tsp powdered coriander cumin
- 1 tsp paste of ginger garlic
- Salt
- Vegetable oil
- Cilantro leaves

Ingredient:
- 1 cup fresh milk
- 1 kg Milk fish fillets
- 2 medium size onion chopped
- 100 gram tamarind
- 300 ml warm water
- ½ tsp turmeric powder
- 1 tbsp chili powder
- 1 tbsp cumin seed
- 1 tsp methi seed
- 1 tsp powdered coriander cumin
- 1 tsp paste of ginger garlic
- Salt
- Vegetable oil
- Cilantro leaves
1. Take the milk fish fillets wash and clean it to cook milk fish curry with fresh milk.
2. Sprinkle some salt to the milk fish fillet, flip it once then sprinkle the other surface with salt. Do this step to all of the milk fish fillets. Set it aside.
3. Take a bowl, pour the warm water and add the tamarind inside. Soak it for one hour then strain it with sieve. Use spoon to press down the tamarind so the juice will comes out from it. Keep the juice aside.
4. Take a frying pan and pour 1 tbsp of vegetable oil inside. Add the cumin seed, onion and methi seed, and fry until the onion becomes translucent.
5. Turn of the heat then cool down the onion mixture. After it completely cool down grind the onion mixture with blender or food processor until it become paste consistency. Set it aside.
6. Take a frying pan and add vegetable oil inside. Put it on medium heat then add the onion mixture paste and the paste of ginger garlic. Stir to mix them.

Add chili powder and turmeric
powder, stir to mix them.
8. Add the milk fish fillets season it with salt and the tamarind juice to your liking.
9. Add fresh milk then heat until the liquid boiled.
10. Add powdered coriander cumin then let it simmer until the liquid thicken.
11. Take it off from heat; pour into a bowl, top with cilantro leaves then serve immediately with rice.
